Wulong bai cha (Oolong white tea) picked in January 2025, this is a winter batch of purely organic Sijichun (four seasons 四季春), bug bitten pesticide-free tea. A second year experiment we have worked with the farmer on, requesting different kind of mild wulong techniques to be added into the process. The 2024 batch was shaken (yao qing), but this year we put light rolling into the mix, which resulted a more aromatic and pronounced mi xiang profile, similar to dong fang mei ren 东方美人 but in a more thin, delicate frame of Sijichun bai cha.

The Mingjian terroir in south Nantou county is very well suitable for the rare winter pick due to hot, dry and stable weather. The tea leaves were able to wither under the sun for 4 hours, then dried indoor from night time till the next day. The last percentage of moisture was dried in dian pei oven at low heat.

A reserved batch we are very content with, continuing last year's successful batch with a new twist. An experimental tea all members of the autumn 2025 Taiwan tour fell in love with.

The organic practice of this tea is using peanuts husks as an organic fertilizer, with no use of pesticides at all.

    Who is this Wuyi Yancha course designed for?

    This course is designed for serious tea drinkers who wish to move beyond descriptive tasting to develop a structured framework for evaluating Wuyi Yancha. You will learn terminology and evaluation logic practiced in Fujian. The Complete Yancha series box is included in the tuition fee, making it the ideal opportunity to deepen your understanding of complex Zhengyan wulong.

    What exactly will we learn during the online sessions?

    We cover the history and terroir of Wuyi Shan, the classification system, and core concepts like Yan Yun and the legacy of Da Hong Pao. We also dive into evaluating key cultivars like Rou Gui and Shui Xian using Chinese national standards, and discuss the critical role of resting and storage in high-end yancha.

    Do I need special teaware for the guided tastings?

    We highly recommend using a standard competition gaiwan to match the grading format used in Fujian tea competitions. This allows for accurate, objective evaluation during the sessions. As a bonus, the first five participants to enroll in the course will receive a professional competition gaiwan completely free.

    How and when is the yancha selection box shipped?

    The Complete Yancha Box is shipped directly from our hyt warehouse in Xiamen, China, well in advance of the spring sessions. You have the option to upgrade your shipping to FedEx for faster, direct delivery all the way to your door.
