For the past eight years, Yancha (Wuyi Rock Tea) has been the centerpiece of our wulong collection and a central focus of our research in Chinese wulong. No tea has captured more of our attention, research, and investment than Wuyi Yancha.

Over the past 2 years, as we relocated to Fujian, we deepened our commitment to Yancha, expanding our sources and exploring rare and niche expressions of this celebrated tea. This year marks our "year of yancha" for us, we established our own evaluation scale based on local standards using professional terminology, grading every tea through blind tastings, multiple brewing approaches, and repeated evaluations over time. It is the perfect time to organize the knowledge we’ve gathered over the years and share our greatest passion through this innovative and original course. During this period we also developed a broader framework for understanding Yancha: organizing in-depth tea tours in Wuyi Shan, creating a professional course focused entirely on Wuyi Yancha, and curating an annual high-end Yancha selection box. Each year the selection follows a different concept and is released in a limited edition.

From ancient traditions to its modern legacy, this course delves into the history and craftsmanship of Wuyi Shan. We provide a structured framework for evaluating yancha using the exact terminology and logic practiced in Fujian. Through various brewing methods, participants will taste the new curated collection alongside rare, advanced selections from our private collection. This guided experience reveals the structural differences that define truly high-level yancha and its unshakable position in the tea world.

    The course consists of four 2-hour sessions, held online this coming spring 2026, and led by course curators Pink Luk and Nadi Biran. All sessions will be conducted in English.

    We also offer a competition-standard gaiwan used for professional Yancha evaluation. This gaiwan follows the grading format commonly used in Fujian tea competitions and allows for more accurate tasting during the sessions.     What is included in the 2026 Yancha Course?

    The 2026 Yancha Course includes four two-hour online sessions led by Pink and Nadi in spring 2026. Registration automatically includes the Complete Yancha series, featuring seven distinct micro-terroirs. You will learn a structured framework for understanding and evaluating Wuyi Yancha using terminology and evaluation logic practiced in Fujian under Chinese national standards.

    Who is this Wuyi Yancha course designed for?

    This course is designed for serious tea drinkers who wish to move beyond descriptive tasting to develop a structured framework for evaluating Wuyi Yancha. You will learn terminology and evaluation logic practiced in Fujian. The Complete Yancha series box is included in the tuition fee, making it the ideal opportunity to deepen your understanding of complex Zhengyan wulong.

    What exactly will we learn during the online sessions?

    We cover the history and terroir of Wuyi Shan, the classification system, and core concepts like Yan Yun and the legacy of Da Hong Pao. We also dive into evaluating key cultivars like Rou Gui and Shui Xian using Chinese national standards, and discuss the critical role of resting and storage in high-end yancha.

    Do I need special teaware for the guided tastings?

    We highly recommend using a standard competition gaiwan to match the grading format used in Fujian tea competitions. This allows for accurate, objective evaluation during the sessions. As a bonus, the first five participants to enroll in the course will receive a professional competition gaiwan completely free.

    How and when is the yancha selection box shipped?

    The Complete Yancha Box is shipped directly from our hyt warehouse in Xiamen, China, well in advance of the spring sessions. You have the option to upgrade your shipping to FedEx for faster, direct delivery all the way to your door.

    Is there a discount for hyt Blind Tasting Club members or past course participants?

    Can I buy the Complete Yancha Series without taking the course?

    The course and the selection box are designed to complement each other perfectly, providing both the reference material and the educational framework. However, the limited edition box is also available on its own for collectors who wish to explore these seven rare micro-terroirs independently.

    This was my second course with Pink, after the Gong Fu Cha course, and the two work really well together. One traces the history and ceremony of tea across the Chinese dynasties, the other going deep on a single celebrated tea and how to evaluate it. I came into Yancha knowing very little, and what I really appreciated was coming away with a real way to approach it. Rather than a loose set of impressions, the course draws on the terminology and evaluation methods, so even as a beginner I had a foundation to actually make some sense of a the tea. Ideas like Yan Yun that could easily stay vague became something I could start to recognize, because we tasted as we learned. And Pink's depth of knowledge made the whole thing genuinely fascinating. Wuyi yancha is a world you could spend a lifetime in, and this course gave me a real foothold in it. I can't wait for whatever comes next.

    This course helped me understand how Yancha is made, different Yancha cultivars, and what gives it that unique character. Pink explained things clearly, especially the Chinese terms like Ming Zhong and the tea processing, and always followed up to make sure we understand well.     I joined this course knowing very little about Yancha. After participating in several activities organized by Pink and Nadi of Ho Yum Tea, I knew this course will change this - and I wasn’t disappointed.     I've been drinking tea for almost a decade now, but I never imagined how much there is to learn about a single genre of tea! Pink and Nadi's Yancha Course gave me the tools to understand and evaluate Wuyi Yancha tea like never before - something that always struck me as a challenge. The course goes way beyond "western" tasting wheels and tasting notes like woody, chocolaty or spicy - it explores the field of Yancha using original Chinese terms that we learned how to adopt (such as yanyun 岩韵, congwei 丛味, guanmu 灌木, etc.), with professional competition-level brewing methods. In addition to in-depth theoretical knowledge, we experienced the diversity of qualities this genre of tea has to offer with educational comparison tasting panels, often tasting super-high-quality award-winning teas. The course is a combination of theoretical - with Pinks translating lots of original texts from Chinese, and practical - with dozens of Yancha teas blind tasted. Pink and Nadi are incredibly knowledgeble in the history, geography and biology of the area and share lots of their personal journey of bringing exclusive and premium teas from Wuyi over the last decade.
